Turri-Burri. Fried Eggplant with Potatoes and Peppers

    Probably you are more used to eat this vegetables grilled instead of fried, but I really recommend you to give a try to this way. This way of cooking the vegetables are very common in some mediterranean regions. You can serve it a a side this, tapas or as appetizer.

    Ingredients: for 2 Servings
    6 Potatoes
    1/2 Eggplant
    1/4 Green Pepper
    1/4 Red Pepper
    1/2 Onion
    3 Garlic Cloves
    2 Bay Leaves
    Olive oil
    Salt to taste

    Procedure:
    First peel and cut the potatoes in cubes like 1 cm (0,5 inch) thick. Then do the same with the eggplant. Finally chopped the peppers and onion.
    Once the olive oil is hot add everything (including the entire garlic cloves and bay leaves) in the frying pan and fry all together for 15-20 minutes or until potatoes get a little brown color.

    Tip: Remember your are frying, you have to put plenty of olive oil. You can use vegetal oil if you want, but is much better and tastier with olive oil. Also I recommend to put paper towel under the tutti-burri to absorve the oil and make it less oily, then remove the paper and start serving

I don’t want to get technical about this topic I just want to show you at a glance the diversity of Spanish wines you can choose, what I think it makes spanish wines even more special.     Spain is the third largest producer of wine in the world, the largest being Italy and France.

    Wine regions in Spain are known as “Denominaciones de Origen” (to make it more familiar for you is like the French appellation). The Demominación de Origen system is controlled by INDO – Instituto Nacional de Denominaciones de Origen. INDO, under the direction of The Spanish Ministry of Agriculture, administers the D.O. (Denominacion de Origen) system.

    Finally D.O. is similar like appellation.

    Cherry Gazpacho

  • How said that gazpacho is not a glamorous dish? Try this .

    Ingredients for 5 Servings:
    1 Pound (0,5 kg) Cherries
    1 Pound (1 Kg) Ripe tomatos
    0,5 Cucumber
    1 Small Red Pepper
    2 Tasblespoons of Cherry Mermelade
    2 Tablespoons of Tomato Ketchup
    1 Garlic Clove
    2 Tablespoons Vinegar
    Salt to tast
    1 Slice of bread
    1 liter of Water
    4 Tablespoons of Olive Oil
    1/2 Pound (250 gr) Jamon Serrano o Prosciutto

    Process:
    First remove the all the pits manually, pressing with your fingers. Then mix and pure it all together in the food processor except for the Jamon. The put the mix in the refrigerator. Serve it cool.
    Then put the Jamon for a few seconds in the microwave in order to get the jamon a nice crispy flavor, then cut the jamon in very thin slices and sprinkle it on the top of your gazpacho.

    I was watching the spanish news and I couldn’t believe what I was listening:
    “The Spanish government has approved a project for a high-speed train line linking Madrid and Barcelona to pass underground four metres in front of the Sagrada Familia basilica’s main facade”.

    What?¿?…You don’t have to be an engineer or an astronaut to realise the problems that could be caused to the Sagrada Familia by the proximity of the train.
